Crockpot Creamy Ranch Chicken Stew

0.0 from 0 votes

This High-Protein Crockpot Creamy Ranch Chicken Stew is the kind of recipe that makes busy weeks feel a little more manageable. It’s warm, creamy, filling, and packed with vegetables and lean protein—all with minimal effort thanks to the slow cooker.

It’s basically comfort food in a bowl, but structured in a way that still fits into balanced eating. Think creamy ranch chicken meets hearty potato stew, with a macro-friendly twist that keeps it high-protein and satisfying without being heavy.

Why You’ll Love This Recipe

  • High in protein (30g per serving)
  • One-pot slow cooker meal with minimal prep
  • Creamy and comforting without being overly heavy
  • Loaded with vegetables and fiber
  • Family-friendly and picky-eater approved
  • Meal prep friendly for lunches or dinners all week

Here are the Main Ingredients you will Need:

Step-by-Step Instructions:

Start by cutting the potatoes into bite-sized chunks, about 1–1.5 inches so they cook evenly without falling apart. Chop the chicken breasts into large, even chunks as well so they stay tender in the crockpot rather than shredding too early.

Add the chicken, potatoes, carrots, celery, onion, and garlic directly into the crockpot.

In a separate bowl, whisk together the cream of chicken soup, milk, water, ranch seasoning, and Worcestershire sauce until smooth. Pour over the ingredients in the crockpot and stir gently to combine.

Cook on high for 4-5 hours or on low for 7-8 hours, until the chicken is cooked through and the vegetables are tender.

About 30 minutes before the end of cooking, stir the stew well to redistribute the sauce, then add the frozen peas. If you want a very thick stew, you can optionally add 1 tbsp of cornstarch mixed with 1-2 tbsp of water (create a slurry) to stew for the final 30 minutes to increase thickness.

Once cooking is complete, turn the crockpot off or switch to warm. Let it sit for 5 minutes, then stir in the Greek yogurt until fully incorporated and smooth. Finish with lemon juice and adjust salt if needed.

Allow the stew to rest for a few minutes before serving so it slightly thickens and the flavours settle.

Optional: finish with shredded cheddar or parmesan if you want extra creaminess and fats- not included in macros

Recipe notes and Modifications:

  • Keep the chicken in large chunks rather than small cubes. This helps it stay juicy and tender and prevents it from shredding too much as it cooks.
  • Add the peas at the end. Stirring them in during the last 30 minutes keeps their bright color and prevents them from becoming mushy.
  • This is an excellent meal prep recipe. The flavors deepen overnight, making leftovers even more delicious the next day.
  • Refrigerator: Allow the stew to cool completely before storing in airtight containers for up to 4 days.
  • Freezer: Freeze in individual portions or family-sized containers for up to 3 months. Because of the Greek yogurt, the texture may separate slightly after thawing, but it becomes smooth again when reheated and stirred.
