    Ingredients

    • 180 g sugar free strawberry jello (3/4 cup)- see note

    • 120 g 2% cottage cheese (about 1/2 cup)

    • 5 g graham cracker crumbs (about 1 tbsp)

    • 75 g strawberries, chopped (approximately 1/2 cup)

    • 15 g vanilla protein powder (1/2 scoop)- see note

    • 2 Weetabix biscuits, crushed

    • 30 g sugar-free maple syrup (about 2 tbsp)

    • 80 g almond milk (approximately 1/3 cup)

    • 2 tsp 0 calorie brown sugar substitute (e.g., Swerve)

    Directions

    • In a small bowl, combine the crushed Weetabix, almond milk, sf maple syrup, 1 teaspoon of the brown sugar substitute, and 5 grams of vanilla protein powder. Mix together until well combined. Smooth this mixture into the bottom of a Tupperware container to form a flat base.
    • Cut the jello into strips and layer them evenly over the Weetabix base.
    • In a blender, blend the cottage cheese with the remaining 10 grams of vanilla protein powder and 1 teaspoon of brown sugar substitute until smooth. Carefully spread this mixture over the jello layer.
    • Top with chopped strawberries and sprinkle with graham cracker crumbs for added texture.
    • Place the parfait in the refrigerator to set for at least 20 minutes, or overnight for best results.
    • Once set, the Strawberry Cheesecake Jello Parfait is ready to be enjoyed as a delightful and refreshing treat.
