It combines all the warmth and comfort of traditional French toast with the rich, aromatic spices of pumpkin pie, all wrapped up in a healthy, protein-packed dish.

Step-by-Step Instructions:

Preheat your oven to 350°F (175°C).

Spray a casserole dish (9×13 inches) with cooking spray. Add the cubed Little Big Bread evenly across the dish.

In a large bowl, mix together the dry ingredients: vanilla protein powder, Swerve brown sugar, pumpkin pie spice, cinnamon, and baking powder.

Add the wet ingredients to the dry mixture: egg whites, whole eggs (whisk in a small bowl prior to adding), cashew milk, pumpkin purée, sugar-free maple syrup, and vanilla extract. Stir until well combined.

Pour the mixture over the cubed bread in the casserole dish, ensuring the bread is fully coated. Press down gently with a spatula if needed to soak the bread evenly.

Sprinkle the chopped pecans evenly over the top of the bread mixture.

Bake in the preheated oven for 45-50 minutes, or until the French toast is set and golden brown on top.

For extra sweetness, top with additional sugar-free maple syrup and sugar-free powdered sugar before serving, if desired.

    • 1 loaf Little Big Bread (cubed/ripped into pieces)

    • 500 g egg whites

    • 3 whole eggs

    • 300 g cashew milk (1 1/4 cups)

    • 225 g pumpkin purée (3/4 cup)

    • 60 ml sugar-free maple syrup (1/4 cup) -see note
