    Ingredients

    • 60 ml light canned coconut milk (1/4 cup)

    • 125 ml almond milk (½ cup)

    • 80 g frozen or canned pineapple chunks (½ cup)

    • 30 g vanilla protein powder (1 scoop)

    • 7 g unsweetened shredded coconut (1 tbsp)

    • 120 g plain non-fat Greek yogurt (½ cup)

    • 2.5 ml coconut extract (optional, ½ tsp)

    • 100 g ice cubes (5-6 cubes)

    • 1 tsp zero calorie sweetener (optional)

    Directions

    • Add all the ingredients to a blender.
    • Blend on high until smooth and creamy
    • Taste and adjust sweetness if needed
    • Pour into a glass and garnish with extra shredded coconut or a pineapple wedge if desired (not included in macros)
    • Serve immediately
