In a small bowl, whisk together the balsamic vinegar, soy sauce, minced garlic, dried oregano, dried thyme, smoked paprika, salt, and pepper to create the marinade.

Place the cleaned mushrooms, bell pepper chunks, zucchini slices, red onion chunks, and cherry tomatoes in a shallow dish or resealable plastic bag. Pour the marinade over the vegetables, ensuring they are evenly coated. Cover or seal and refrigerate for at least 30 minutes, or ideally up to 2 hours, to allow the flavors to develop.

Preheat your BBQ grill to medium-high heat.

Thread the marinated vegetables onto wooden or metal skewers (see note), alternating the vegetables as desired.

Place the skewers on the preheated grill. Cook for about 8-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
