The Harvest Chicken Salad is a refreshing and protein-packed meal that brings together the natural sweetness of grapes and apples with the crunch of celery and pecans. This salad is perfect for a quick lunch, a light dinner, or as a dish to bring to a potluck. The Greek yogurt and light mayonnaise-based sauce keep it creamy without the extra calories, making it a healthier option without compromising on flavor.

Why You’ll Love this Harvest Chicken Salad

  • Nutritious and Balanced: This salad is packed with protein from the chicken and Greek yogurt, healthy fats from the pecans, and plenty of vitamins and minerals from the fruits and veggies. It’s a well-rounded meal that will keep you full and energized.
  • Quick and Easy: With a prep time of just 15 minutes and no cooking required, this recipe is perfect for those busy days when you need a healthy meal in a hurry.
  • Flavorful and Refreshing: The combination of sweet grapes, crisp apples, and tangy dressing creates a burst of flavor in every bite. It’s a refreshing change from the usual heavy, mayo-laden chicken salads.
  • Make-Ahead Friendly: This salad tastes even better after the flavors have had time to meld in the fridge, making it an excellent option for meal prep. It keeps well for several days, so you can enjoy it throughout the week.

Here are the Main Ingredients You will Need for this Chicken Salad:

Step-by-Step Instructions:

In a medium bowl, combine the Greek yogurt, light mayonnaise, sugar-free sweetener, garlic powder, salt, red wine vinegar, and lemon juice.

Mix thoroughly until smooth and well combined.

In a large mixing bowl, combine the shredded chicken breast, diced celery, chopped pecans, diced apple, and grapes.

Pour the sauce over the chicken mixture.

Mix thoroughly until all ingredients are well coated with the sauce.

For optimal taste, refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Recipe Notes/Modifications

  • I like using Costco Kirkland Canned Chicken Breast for this recipe. While canned chunk chicken breast provides convenience, you can also use shredded cooked chicken as an alternative.
  • Sweetener: Monk fruit is recommended, but you can use any preferred sugar-free sweetener.
  • Yogurt: For a dairy-free version, you can substitute Greek yogurt with a plant-based yogurt alternative- macros will differ.
  • I like serving this with crackers, on high fiber bread/wraps, or on apples for a refreshing snack!
  • Store the Harvest Chicken Salad in an airtight container in the refrigerator. It will stay fresh for up to 3-4 days. Before serving, give it a quick stir to redistribute the dressing.
