Step-by-Step Instructions:

Preheat your oven to 350°F (175°C).

Steam the frozen cauliflower rice in the microwave for 5 minutes.

In a large mixing bowl, combine the oats, chocolate protein powder, ground flaxseed, brown sugar substitute, cocoa powder, baking powder, salt, and dark chocolate chips.

In a blender, blend the cottage cheese (112g) with some of the almond milk until smooth. Transfer to a separate bowl and add the egg whites, remaining almond milk, and vanilla extract. Mix until well combined.

Add the wet ingredients to the dry ingredients and mix until fully incorporated. Stir in the blended cauliflower rice until evenly distributed.

Transfer the mixture to a sprayed 9×11 inch baking pan and spread it out evenly. Bake in the preheated oven for 42-48 minutes, or until the bars are just starting to set and slightly firm to the touch.

While the bars are baking, prepare the icing. Blend the cottage cheese, light cream cheese, chocolate protein powder, sugar-free sweetener, and cocoa powder until smooth and place in the fridge until the bars are cooled.

Once the bars are cooled, spread the chocolate icing evenly over the top.

Cut the bars into squares and enjoy!

Recipe Notes and Modifications

  • The cauliflower rice adds bulk and moisture without affecting the flavor much. If you’d prefer a slightly firmer bar, reduce the almond milk by 50ml.
  • Whey/casein protein powder is recommended for its texture and flavor, I recommend the Select One PEScience brand, flavour Chocolate Truffle for this recipe.
  • The amount of sweetener can be adjusted based on your preference. You can taste the batter before baking and add more zero-calorie sweetener if needed.
  • If the icing seems too thick, you can add 1-2 tablespoons of almond milk or water to achieve a creamier texture.
  • Add a teaspoon of instant coffee powder for a mocha flavor or some orange zest for a chocolate-orange twist.
  • Store the bars in an airtight container in the fridge for up to 5-7 days. The icing stays stable, and the bars will remain moist.

    • For the Bars:
    • 160 g oats (1 ⅓ cups)

    • 75 g chocolate protein powder (¾ cup- see note)

    • 15 g ground flaxseed (1 ½ tbsp)

    • 1/2 cup zero-cal sweetener (e.g., Swerve, monkfruit)

    • 100 g dark chocolate chips (½ cup)

    • 112 g cottage cheese (½ cup)

    • 100 g egg whites (½ cup)

    • 300 ml almond milk (1 ¼ cups)

    • 500 g frozen cauliflower rice (3 ½ cups, steamed)

    • 1 tbsp vanilla extract

    • 10 g cocoa powder (2 tbsp)

    • 1/2 tsp cinnamon

    • 2 tsp baking powder
