In a large mixing bowl, thoroughly combine the Greek yogurt, Hidden Valley ranch seasoning, low-fat cream of chicken soup, shredded cheese, garlic salt, dill, and onion powder.

Add the canned, drained chicken breast (or cooked chicken breast) to the mixture and stir until evenly distributed.

Add the frozen tater tots and pre-cooked cauliflower rice (microwave the cauliflower rice for 4 minutes prior to adding it to the mixture). Mix until everything is well combined.

Transfer the mixture into a large casserole dish that has been lightly sprayed with cooking spray.

Chop the cooked bacon and sprinkle it evenly on top of the casserole.

Bake for 55-65 minutes or until the top is golden brown and the casserole is heated through.

Let the casserole sit for a few minutes before serving.

  • If you don’t have canned chicken, you can use any cooked chicken. Rotisserie chicken works well, or you can cook your own chicken breast or thighs. Just shred the chicken into bite-sized pieces.
  • To increase the veggie content, consider adding additional vegetables like spinach, bell peppers, or zucchini. Just chop them finely and add them to the mix with the cauliflower rice.
  • This casserole can be assembled ahead of time and stored in the fridge for up to 24 hours before baking. Alternatively, you can freeze it for later use. If frozen, bake from frozen but increase the cooking time to ensure it is heated through

    • 3 cans Kirkland seasoned chicken breast, drained (or 588g cooked shredded chicken breast)

    • 455 g cooked chicken breast
