When I say making this Buffalo Chicken Lasagna is a breeze, I mean it!
Let’s go through it Step-by-Step:
In a food processor, blend cottage cheese, Laughing Cow cheese wedges, buffalo sauce, Parmesan cheese, and Hidden Valley Ranch powder until smooth.


Spread a thin layer of the sauce mixture on the bottom of a 9×13 inch casserole dish.

In a separate bowl, combine the chicken, onion, egg, and spinach with the remaining sauce mixture.

Arrange 3 lasagna noodles lengthwise over the sauce in the dish. Cover with 1/3 portion of the buffalo chicken mixture, and sprinkle 40g each of mozzarella and cheddar cheese. Repeat the layering two more times.


Place the final layer of noodles and cover with the remaining sauce and 50g each of mozzarella and cheddar cheese.

Cover with aluminum foil and bake for 45-50 minutes. Remove the foil and continue baking for another 10-15 minutes. Optionally, broil for 2-3 minutes to achieve a lightly browned top.

Serve and Enjoy: Allow to cool slightly before serving to help the lasagna set for easier slicing.

Recipe Notes and Modifications:
- I like using Kirkland Canned Chunk Chicken Breast for this recipe
- I would rate this 2.5/5 for spice. If you prefer a less spicy version, add 2 more laughing cow wedges or 100g more of cottage cheese. Macros will be different if you do this.
- You can also assemble a day in advance and refrigerate before baking. Adjust cooking time as necessary.
- To store this bake, store it in the fridge for up to 4 days in an airtight container- i love these baking dishes from amazon as they come with a lid and make storage easy
- Freezing Instructions: Cool completely and store in an airtight container. Thaw and reheat in the oven.
