This recipe is also packed with protein and fiber while being low calorie. This recipe strikes the balance between an indulgent treat and a healthy breakfast. 

Why are both fiber & protein so essential for breakfast?

By starting your day with a meal that is high in protein and fiber, you will have better craving management, more stable blood sugar and energy, and you will also feel more satiated! Most french toast style meals are carb heavy and low protein, leading to an energy crash shortly after eating. This does not feel good! This is why I have created this amazing Banoffee French Toast. It has 28 grams of protein, 7.6 grams of fiber and only 360 calories per serving!

  • The bread used for this recipe is brand Little Big Bread, if you use different bread macros may differ.
  • I recommend the brand Pescience Select one for protein powder, for this recipe use the Vanilla Gourmet flavour!
  • If you would like to make this recipe dairy-free, you can easily do so! Simply swap the whey/casein protein powder for a vegan protein powder, I recommend Pescience Vanilla Vegan Protein Powder

    Ingredients

    • 240 g overripe bananas (approximately 3 small or 2 large bananas, can be frozen)

    • 1 loaf low carb/high fiber bread- see note

    • 60 ml sugar-free maple syrup (1/4 cup)

    • 500 g egg whites (about 2 cups)

    • 120 g vanilla protein powder (about 1 cup)-see note

    • 500 ml unsweetened almond milk (2 cups)

    • 1/2 cup zero-calorie brown sugar sweetener (e.g., Swerve)

    • 110 g biscoff spread (20g for baking, 90g for topping, about 1/2 cup total)

    • 2 tsp cinnamon

    • 2 tsp caramel extract

    • 2 tsp vanilla extract

    • 1 tsp baking powder

    • Pinch salt

    • 3 Lotus Biscoff cookies, crushed (for topping)

    Directions

    • Set your oven to 350°F (175°C). Prepare a 9×13 inch baking dish by spraying it with non-stick cooking spray.
    • Tear the bread into pieces or cut into cubes and place them in the prepared baking dish. Set aside.
    • In a large mixing bowl, combine the dry ingredients (protein powder, sweetener, cinnamon, baking powder, salt) along with the extracts. Add the bananas and stir until well combined.
    • Place 20g of Biscoff spread in a microwave-safe dish and heat for about 20 seconds, or until melted. Stir this into the banana mixture.
    • Add the almond milk, sugar-free maple syrup, and egg whites to the bowl. Whisk thoroughly to combine.
    • Pour the liquid mixture over the bread in the baking dish. Use a fork to gently mix and ensure all pieces of bread are evenly soaked.
    • Place the dish in the preheated oven and bake uncovered for 45-55 minutes, or until the top begins to brown and the bake feels firm to the touch.
    • Remove from the oven and melt the remaining 90g of Biscoff spread. Drizzle over the top of the bake. Sprinkle the crushed Biscoff cookies evenly over the surface.
    • Allow the bake to cool slightly before serving. This dish can be enjoyed warm or at room temperature.

      • I haven’t frozen this one but have frozen other French toast bakes in the pan or in individual pieces and it works great !
