  • Whey/casein protein powder is recommended for its texture and flavor, I recommend the Select One PEScience brand, flavour Vanilla Gourmet for this recipe.
  • If you prefer a smoother texture, you can blend the steamed cauliflower rice with the mashed bananas before mixing it with the other ingredients.
  • Feel free to add other mix-ins such as chopped nuts, dried fruits, or seeds for added texture and flavor. Be mindful this will change the macros
  • Store any leftovers in an airtight container in the refrigerator for up to five days. You can also freeze individual portions for a quick and healthy breakfast option

    Ingredients

    • 160 g oats (1 3/4 cups)

    • 700 g frozen cauliflower rice (5 cups)

    • 260 g egg whites (1 cup)

    • 2 whole eggs

    • 15 g ground flaxseed (2 tbsp)

    • 100 g almond milk (1/3 cup)

    • 240 g ripe mashed banana (1 cup or 2 large bananas)

    • 35 g mini chocolate chips (3 tbsp)

    • 1 1/3 tbsp baking powder

    • 1/2 cup alternative sweetener (such as monk fruit or Swerve brown sugar)

    • 100 g vanilla protein powder (1 cup)- see note

    • 2 tsp cinnamon

    • 1 tbsp vanilla extract

    • 1 tsp salt

    Directions

    • Preheat your oven to 350°F (175°C).
    • Steam the cauliflower rice in the microwave for 5 minutes.
    • In a 9×13-inch casserole dish, whisk the eggs together, then mix in all the ingredients except the chocolate chips.
    • Mix in the steamed cauliflower rice.
    • Spread the mixture evenly in the dish and top with the chocolate chips.
    • Bake for 40-50 minutes (typically 45 minutes), until the edges are just starting to brown and the middle is just starting to set. It will continue cooking as it cools.
    • Let cool completely before serving.

    6. I only had one 350g pkg of cauliflower but I really wanted to make this, so, I dug through my freezer and found a 350g pkg of frozen spiral zucchini. It worked!

        Oh that makes me so happy to hear you enjoyed it- swapping in zucchini was a great choice! You can do that with any of the bakes i post- just keep an eye on the cook time as zucchini has more moisture so cook time may be slightly different- if you squeeze out excess water with zucchini then it should basically be the same!     8. This was absolutely delicious! I thought it would have a strong cauliflower taste with the amount in the recipe but it doesn’t! I used PEscience peanut butter cookie protein powder and chia seeds instead of ground flax as it was what I had on hand and it was delicious! Perfect for meal prepping this week.
