Step-by-Step Instructions:

Preheat oven to 350°F (175°C).

Place cut bread pieces into a lightly sprayed 9×13 sized casserole dish.

In a large bowl, mix together dry ingredients.

Add remaining ingredients then whisk untill combined, then add apple pie filling. Mix until combined

Pour the mixture over the bread, ensuring all pieces are coated. Push down gently with a fork if needed to ensure all the bread is covered.

Bake for 60-65 minutes, until the top is golden brown.

Optional: Top with additional sugar-free syrup before serving.

  • I recommend the brand Pescience Select one for protein powder, for this recipe use the Vanilla Gourmet flavour!
  •  I love these baking dishes from amazon as they come with a lid and make storage easy! 
  • The brand of apple pie filling I used for macros was E.D. Smith
  • You can use another high fiber low calorie bread, macros may differ. Little Big Bread can be bought at Costco, Safeway, Save on Foods, Walmart and Superstore.
  • This French toast bake keeps well in the fridge for up to 4 days. Reheat individual portions in the microwave or oven for best results.
  • For more spice, you can add ¼ tsp of nutmeg or ginger to complement the cinnamon and allspice/cloves.

    • 1 loaf Little Big Bread, cut into bite-sized pieces- see note

    • 600 g egg whites (2.5 cups)

    • 120 g vanilla protein powder (about 1 and ¼ cup-see note)

    • 540 g apple pie filling (1 can)- see note

    • 350 ml almond milk (about 1 1/2 cups)

    • 60 ml sugar-free maple syrup (about 1/4 cup)

    • 2.5 tsp cinnamon

    • 1/2 tsp allspice or cloves

    • 1 tsp vanilla extract

    Directions

    • Preheat oven to 350°F (175°C).
