Push the onions and garlic to the side of the pot and add the remaining 5 ml of olive oil. Add the ground chicken to the pot. Cook the chicken, breaking it apart with a spoon, until fully cooked and no longer pink, about 5-7 minutes. Season with salt and pepper.

Stir in the sliced mushrooms and cook until they release their moisture and are golden brown, about 8-10 minutes.

Pour in 1000 ml of the chicken broth. Stir in the dried thyme and rosemary, then season with additional salt and pepper if needed. Bring the mixture to a simmer and cook for 5-7 minutes.

In a blender or food processor, blend the cottage cheese until smooth. Add remaining chicken broth to the soup and stir, then add the blended cottage cheese to the soup, stirring to combine.
