How to Make my Apple Pie Baked Oats Step-By-Step:

Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray.

Prepare the cauliflower by steaming the frozen riced cauliflower according to package instructions until tender, about 5 minutes.

In your 9×13 dish, add the dry ingredients: rolled oats, flaxseed, zero-calorie sweetener, vanilla protein powder, baking powder, cinnamon, nutmeg, allspice, ginger, cloves, and salt. Mix until well combined.

Add the diced apples and combine.

Add in the wet ingredients: unsweetened applesauce, almond milk, sugar-free maple syrup, egg whites, and whisked whole eggs. Combine all ingredients.

Add in the steamed cauliflower rice and combine. Spread the mixture evenly into the prepared baking dish.

For the streusel, blend the oats with zero-calorie sweetener and cinnamon, then add in the melted light butter and stir to combine until it forms a crumbly topping. Spread this over the apple pie oats.

Bake in the preheated oven for 40-50 minutes, or until the top is just beginning to set and the edges are starting to golden.

Once done, remove from the oven and let it cool for at least 20 minutes before serving (this helps it solidify).

Recipe Notes and Modifications:

  • 400g of diced apples is equivalent to about 2 medium or 3 small apples. You can leave the peel on for added fiber and texture, but peeling them will give a smoother texture.
  • I like using brown sugar swerve as the zero-calorie sweetener for this recipe, but you can use any option you prefer.
  • I like using Steeves Sugar-Free Maple Syrup for this recipe.
  • I recommend the brand Pescience Select one for protein powder, for this recipe use the Vanilla Gourmet flavour!
  • Add-ins: You can add a handful of raisins or chopped nuts for extra texture and flavor, please be mindful macros will be different.
  • To store, allow the baked oats to cool completely. Cover the dish with plastic wrap or aluminum foil, or transfer individual portions to airtight containers. I like using these  baking dishes as they come with a lid and make freezing easy! Store in the refrigerator for up to 5 days. You can freeze for up to 3 months.

    • 160 g rolled oats (1 3/4 cups)

    • 120 g unsweetened applesauce (1/2 cup)

    • 15 g flaxseed (2 tbsp)

    • 260 g egg whites (1 cup)

    • 2 whole eggs

    • 1/2 cup alternative zero-calorie sweetener – see note

    • 80 ml sugar-free maple syrup (⅓ cup)- see note

    • 60 ml almond milk (1/4 cup)

    • 100 g vanilla protein powder (about 1 cup)

    • 2 tsp vanilla extract (10ml)

    • 1 tbsp + 1 tsp baking powder

    • 1.5 tsp ground cinnamon

    • 1/2 tsp ground nutmeg
