Let’s Walk through it Step-By-Step!

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray.

Cut the bread into cubes and spread them evenly in the prepared baking dish. Layer the slices of lean turkey breast on top of the bread cubes.

In a large mixing bowl, whisk together the eggs, egg whites, almond milk, Dijon mustard, sugar-free maple syrup, salt, and pepper until well combined.

Pour 2/3 of the egg mixture evenly over the bread and turkey in the baking dish, ensuring everything is evenly coated.

Place a slice of Swiss cheese on each slice of turkey breast in the baking dish.

Pour the remaining egg mix over the bake

Sprinkle corn flakes evenly over the top of the egg mixture in the baking dish

Place the baking dish in the preheated oven and bake for 35-45 minutes, or until the eggs are set and the top is golden brown.

Once done, remove the breakfast bake from the oven and let it cool for a few minutes before slicing and serving. When serving, optionally top with powdered zero-calorie powdered sweetener and sugar-free raspberry jam.

    • 1 loaf low carb/high protein bread cut into cubes- see note

    • 375 g lean turkey breast slices

    • 220 g Swiss cheese slices (about 7 slices) -see note

    • 25 g corn flakes (about 1 cup)

    • 6 large whole eggs

    • 120 g egg whites (1/2 cup)

    • 300 ml unsweetened almond milk (1 1/4 cup)

    • 20 g Dijon mustard (1 tbsp)

    • 20 g sugar-free maple syrup (about 1 Tbsp)

    • Salt and pepper to taste

    • zero-calorie powdered sugar, sugar-free raspberry jam, sugar-free maple syrup. I do highly recommend serving with sugar-free raspberry jam!
