In a mixing bowl, combine cottage cheese, sugar-free maple syrup, vanilla extract, and egg. Mix until well combined.

In a separate bowl, whisk oat flour, whey/casein protein powder, baking powder, and salt.

Gradually add dry ingredients to the wet ingredients, mixing until a dough forms. Fold in milk chocolate chips.

Using a spoon or cookie scoop, drop 1.5 tablespoon-sized portions of dough onto the prepared baking sheet, leaving some space between each cookie. Flatten each cookie slightly with the back of a spoon.

  • If you don’t have oat flour on hand, you can make your own by blending rolled oats until they reach a flour-like consistency.

    • 240 g 2% cottage cheese (1 cup)

    • 60 g sugar-free maple syrup (about 1/4 cup)

    • 1 egg

    • 150 g oat flour (about 1 1/4 cups)- made from rolled oats, see note
