In a large bowl, combine: ground beef, cooked veggie mixture, egg + egg whites, breadcrumbs, Worcestershire sauce, Dijon mustard, seasonings

Mix just until combined (don’t overmix)
Shape, Glaze and Bake
Option 1 (Best texture): Shape into a loaf on a parchment-lined baking sheet. Form into a loaf ~2 1/2–3 1/2 inches tall- see picture.

Option 2 (Loaf pan): Line loaf pan with parchment. Press mixture in gently.
Mix all glaze ingredients in a small bowl, spread evenly over top of raw meatloaf

Bake 55–65 minutes or until internal temperature reaches 160°F (71°C)
Rest 10 minutes before slicing, slice and serve
