Step-by-Step Instructions:

Preheat oven to 350°F. Spray a 9×13-inch baking dish with cooking spray.
Lightly toast the 8 slices of high-protein bread until golden and firm. Cut or tear into bite-sized pieces and set aside.
In a large skillet over medium heat, cook the ground beef, onion, and diced peppers until the beef is browned and vegetables are softened. Drain any excess fat. Season lightly with salt and pepper.

In a bowl, mix the tomato sauce, tomato paste, mustard, Worcestershire sauce, brown sugar substitute, garlic powder, smoked paprika, chili powder, and a bit more salt and pepper, then stir it into the beef mixture.

Simmer 3-5 minutes until just starting to thicken, then stir in apple cider vinegar for brightness. If the sauce is quite thick, add 2-3 tbsp of water or broth to thin.

Spread half of the beef mixture evenly on the bottom of the baking dish.

Add the toasted, bite sized bread pieces evenly on top of the beef layer.

Spread the remaining beef mixture evenly over the bread.

Sprinkle all of the shredded cheddar cheese on top.

Bake uncovered for 12-18 minutes, until bubbly and the cheese is melted and lightly golden.

Cool 5 minutes before serving.

  • Make it extra saucy:
    If you like a saucier Sloppy Joe, add an extra ¼–½ cup tomato sauce or a splash of broth before layering. This will slightly alter macros. 
  • Add hidden veggies:
    Finely chopped mushrooms, zucchini, or even shredded carrots can be added to boost volume and nutrients—just cook off excess moisture. Will change macros. 
  • Make ahead:
    Prepare the beef mixture up to 2 days in advance and store in the fridge. Assemble and bake fresh when ready.
  • Let the casserole rest for 5 minutes after baking so it sets slightly and slices cleaner.
  • Stores well in the fridge for up to 5 days.

Ingredients

  • 750 g extra lean ground beef (1⅔ lb)

  • 180 g diced onion (1⅓ cups)

  • 400 g diced bell peppers (about 3 cups, mix of colors)

  • 400 g no-sugar-added tomato sauce (1 and ¾ cups)

  • 45 g tomato paste (3 tbsp)

  • 20 g yellow mustard (1⅓ tbsp)

  • 20 mL Worcestershire sauce (1⅓ tbsp)

  • 1 1/2 tbsp zero calorie brown sugar substitute

  • 1 ½ tsp garlic powder

  • 1 tsp Smoked Paprika

  • 1 –1½ tsp chili powder

  • 1 –2 tsp apple cider vinegar

  • Salt & pepper, to taste

  • 160 g light shredded cheddar cheese (⅔ cup)
