In a blender, combine cottage cheese, vanilla extract, and maple syrup until smooth.

Transfer the mixture to a large bowl. Add the protein powder and almond flour; mix until fully incorporated.

Stir in the chocolate chips.

Enjoy immediately or refrigerate in an airtight container for up to 5 days.

  • I recommend the brand Pescience Select one for protein powder, for this recipe use the Vanilla Gourmet flavour!
  • If you want a low fat option, sub part of the almond flour with oat flour (lower in fat, higher in carbs). Macros will differ.
  • Serving: Enjoy as-is, roll into balls, or spread over rice cakes or toast.
  • Store in air tight container for up to 5 days.

    • 450 g low-fat cottage cheese (approx. 2 cups)

    • 10 g vanilla extract (2 tsp)

    • 60 ml sugar-free maple syrup (4 tbsp) — can use real syrup, but macros will vary

    • 50 g vanilla protein powder (approx. ½ cup) — I used PEScience

    • 60 g Chocolate chips (approx. ⅓ cup)

    • 150 g almond flour (1.5 cups)
