Step-by-Step Directions
Making the Crust
Preheat your oven to 350°F (175°C). Line an 8-inch round springform pan with parchment paper. (For a larger cheesecake, see notes below.)
In a food processor, pulse the oats until finely ground. Add vanilla protein powder, zero-calorie sweetener, sugar-free maple syrup, and melted coconut oil. Pulse until the mixture comes together

Press the crust mixture evenly into the bottom of the prepared pan. Set aside.

Preparing the Filling
In a large blender or food processor, mix the room temperature reduced-fat cream cheese and zero-calorie sweetener until smooth and creamy.
Add to processor the non-fat Greek yogurt and cottage cheese and combine.
Gradually mix in 60g vanilla protein powder and 1 teaspoon vanilla extract until well combined.
Add 2 large eggs, one at a time, mixing just until blended after each addition.

Melt white chocolate chips and mix into the filling. If you prefer, you can also fold in unmelted white chocolate pieces for a bit of texture. Microwave raspberries for 45-60 seconds and fold in.

Baking
Pour the filling over the crust in the pan and bake for about 38-42 minutes or until the center is almost set but still slightly jiggly.


Cool Gradually: Turn off the oven, slightly open the oven door, and allow the cheesecake to cool in the oven for 1 hour. Remove from the oven and let sit in the fridge for 30 minutes before serving.
Garnish with fresh or microwaved frozen raspberries before serving for an extra burst of color and flavor (not included in macros).

Recipe Notes and Modifications
- Whey/casein protein powder is recommended for its texture and flavor, I recommend the Select One PEScience brand, flavour Vanilla Gourmet for this recipe.
- If you are using a 10-inch cake pan, cook time is 28-32 minutes
- You can melt the white chocolate chips and then add to mix to have a smoother white chocolate flavour, or leave solid for chunks of white chocolate
- Feel free to use your preferred zero-calorie sweetener. Erythritol, Stevia, or Monk Fruit Sweetener all work well.
- This cheesecake can be stored in the refrigerator for up to 5 days. It also freezes well; wrap individual slices in plastic wrap and store in an airtight container for up to 2 months. Thaw in the refrigerator before serving.
